Stock forecast & alert thresholds
Theoretical stock = last physical count + received − Toast sales since. Re-anchored by every count.
What this is. The number under Theoretical is what the depletion engine believes is on the shelf
right now. It is not a count — it is the last count, plus what was received, minus what Toast says
was sold since. Walk over and count two or three items, then compare. If they disagree, tell me before
this drives any alerts.
Sold and Received are since the last count — not today. On the day of a count, only sales made after the count are deducted, so you can count in the morning and recalculate that afternoon to see the day so far. If counted on is a week ago, Sold is a week of sales. Where the last count is older than the sales window we can scan, the row says can’t compute rather than printing a number that would be wrong.
Threshold is the fixed number that triggers a Thursday alert. It was seeded from each item's
min_on_hand. It is a fixed line on purpose, never a projection — a forecast that is wrong
twice stops being read. An item with no threshold can never alert.
